Pav Bhaji

Ingredients

  • Potatoes
  • Tomatoes
  • Red onion
  • Bell peppers
  • Garam masala
  • Haldi
  • Salt
  • Chili 
  • Lime 
  • Cilantro 
  • Olive oil
  • Buns - pav

Preparation

Wash, peel and cut golden potatoes.


Use a glass container and cook them in the microwave until tender.



Chop tomatoes, bell peppers, and red onion.



Brown the onion



Add the tomato


bell peppers. Steam them in a pot.


Add haldi, garam masala, salt and chili.


Add cooked potatoes. Keep cooking on low heat (20-30mins) and make it into a fine mix by breaking the potatoes with your spatula. (Do not use a blender!)



Garnish with cilantro.



Eat as a sandwich with hamburger buns. Add lime to taste.


Enjoy!

Aloo Jira (Fennel)

Ingredients

  • Potatoes (white, red or gold are ok)
  • Red Onions
  • Haldi (tummeric)
  • Chilli powder
  • Salt
  • Cilantro
  • Jira (fennel seeds)
  • Olive oil
Preparation

Wash potatoes and place in a glass container.Boil the potatoes in the microwave. Small potatoes take less time to cook, or you can peel and cut them before microwaving. 



Cut the potatoes in small pieces (before or after cooking) your choice.


Brown potatoes in olive oil.


On a separate pan sautee red onions.


Combine potatoes and onion until fully browned.


Add jira seeds, haldi, salt and chilli powder.


Garnish with cilantro.


Enjoy with roti or as a side dish!

Mutter Panner

Finely chop red onions and tomatoes. Prepare the curry by first cooking the onion with olive oil until brown. Then add the tomatoes and spices - haldi, salt, garam masala and chili.










Cut paneer into cube. You can fry the paneer too (separately) if you wish but you can reduce some oil by just adding in the paneer to the gravy. Add some frozen peas as well. Gently stir for few minutes until the peas are cooked.

Chole - Garbanzo

In this simplified version, start with some ready to eat S&W Garbanzos.



Chop and blend some onions and pour into a pan with some olive oil and cook.You will smell the strong onion!





Blend some tomatoes and add to the onions when they begin to dry up.





Add some masalas - haldi, garam masala and salt to taste. You gravy is almost ready. Cook for few minutes then add the garbanzo. Cook for another 5-10mins on low heat, then add some cilantro and ready to serve!








Served with Roti, Arbi and basmati rice!
