Plum Coulis

Using our home grown plums to make coulis (puree).

Ingredients
  • Plums
  • Sugar
  • Lime
  • Cinnamon
Fresh home grown plums (or from the market).



Wash plums.


Steam plums.




Remove seeds.






Add sugar (to taste, start with half cup sugar for 1 cup of pulp), lime and cinnamon.


Boil at low heat for several hours. Later let it cool and bottle it.



Enjoy with toast or baked brie and crackers!

Quinoa with Tofu Salad

Ingredients
  • Quinoa
  • Lentils
  • Lime
  • Tofu
  • Onion
  • Chillies
  • White vinegar
  • Cilantro
  • Salt
Preparation

Rinse quinoa and boil it.  




Rinse and boil lentils separately from quinoa until tender, but not mushed. We used the microwave. You can use a pressure cooker for the lentils.





Chop onion, cilantro and tofu into small pieces.






Add boiled quinoa and lentils after they are cooled to the chopped onion and cilantro. Add lime, salt and white vinegar.


Enjoy!

Hummus


Ingredients
  • Canned garbanzo beans
  • Tahini sauce 
  • Garlic powder (or clove)
  • Salt and pepper to taste
  • Lime 

Preparation
Rinse canned garbanzo beans (you can also boil raw beans until soft).




Add garbanzo beans and tahini sause to a blender.





Add lime, garlic, salt and pepper.


Blend until pure.








Enjoy with pita chips or pita bread.

Mexican Cabbage


Ingredients
  • Cabbage
  • Serrano Chiles
  • Onion
  • Cilantro
  • Garlic
  • Oregano
  • Tomatoes
Preparation

Chop cabbage in long slices.





Chop tomatoes. 


Chop chiles and onion.


Stir fry onions, tomatoes, chiles until it looks like a tomato paste.




Add cabbage.



Let the cabbage brown until all cabbage's water is dry.





Add lime and jalapeno peppers.


Enjoy with corn tortillas.
