Gorditas


Ingredients
  • Baking powder
  • Baking soda
  • Eggs
  • Hot water or milk 
  • Sugar
  • Butter or Olive oil 
  • Cinnamon
  • Sour cream 
  • Salt 
Preparation






Mix dry ingredients: flour (start with 1 cup), sugar (start with 3/4 cup), baking soda (1/2tsp), baking powder (1 tsp) and cinnamon (to taste). Add salt if sour cream does not have salt or to taste.




Combine the liquids (eggs (2), melted butter or olive oil (4 tblsp) and start with 1/2 cup of hot water or milk, add small container of sour cream. Add dry ingredients and mix until dough is soft, but not mushy.









Make small patties and use a flat pan to cook them in.








Enjoy by themselves, or jam and accompany them with milk, coffee, or hot chocolate.

Pie Crust Cookies


Ingredients
  • Frozen pie crusts from Trader Joes
  • Chocolate chips
  • Strawberry jam
  • Butter or olive oil
Preparation

Thaw out  crust.



Use a rolling pin to thin out the crust.


Use a class to cut circles.




Add oil or butter to a cookie sheet. Preheat the oven to 400 degrees.




Put jam or chocolate chips on cut dough.


Fold it in half.



Bake for 15 minutes or until brown.





Let them cool down. Enjoy by themselves or with ice cream.

Polenta

Ingredients
  • Polenta (form of corn meal)
  • Milk 
  • Butter
  • Salt and pepper (any other flavors you may want-e.g. chili, garlic, spinach, kale, etc)
Preparation
 






Heat milk with butter (to taste).



Add polenta and milk as needed.




The consistency should be soft. Serve with brussel sprouts!

Grilled Asparagus

Ingredients

  • Asparagus
  • Salt 
  • Pepper
  • Olive oil
  • Butter or spread
Preparation

Rinse asparagus.




Add olive oil to a hot flat pan. Alternately use butter or spread.

Add asparagus.


Sprinkle some salt and pepper.


Steam for a few minutes.


Then roast a high heat (avoid overcooking). You want them crunchy!


Enjoy as a side dish or on their own!
