Paneer Sabzi

Start with making a tomato stir fry with onions and mixed frozen veggies - peas, carrots, beans and corn. Add haldi, garam masala and salt to taste.





Separately stir fry the paneer in some olive oil and mix with the vegetable stir fry.

Vegetable biryani

Start with washing some basmati rice and soaking it in water for few minutes.




Add to a pan start to brown adding some olive oil.



Once the rice starts to look cooked, add water and a small amount of kesar (saffron). Add mixed veggies and let it cook.





Top off with some caramelized onions, stir and ready to serve!

Fingerling potatoes

Ingredients:
  • Fingerling potatoes: These are a fancier kind of potatoes. The color and shape add to the flavor too!
  • Salt
  • Chilli
  • Garam masala
  • Olive oil
  • Lime
Preparation (see pictures below):

Spices are always added based on the amount of base ingredient (in this case potatoes)


Wash thoroughly

Leave the skin on the potatoes


Put in the microwave for 5-7 mins (until soft, microwaves work at slightly different temperatures-avoid overcooking!)

Chop in long slices


Add olive oil to a hot pan; wait for sizzling sound

Add pre-cooked potatoes to pan

Stir potatoes until brown



Add spices to taste (salt, chilly and garam masala; evenly distribute spices so they cover the whole potatoes

Continue to stir until evenly brown

Sprinkle just a little bit of lemon juice; ready to serve

Green Beans

Simple and healthy. Put some chopped green beans in a covered pot. Add salt, oil, haldi, garam masala and some chilli to taste. Don't add any additional water!







Ready to serve!

Rajma

Kidney beans or rajma go along well with some white rice.

Prepare the curry with frying some onion until it is brown.


Add some cut tomatoes (use a can or fresh)


The kidney beans come already cooked so just drain them out and rinse them with water. Mix it all up and cover to cook for a few mins. Serve hot!!

Okra - Bhindi

You need lots of Okra plus some onion. The okra shrinks dramatically after it cooks so dont add any water while cooking!

Chop the okra and onion - red onions are preferred but you can use white ones too:





Add some oil to a pot and add the onions first. Cook until they are brown.


Add in the Orka and masalas - salt, haldi, garam masala. Cover and cook to steam the okra.




Ready to eat!

MexMasala Gobi

Start with the original Gobi recipe. When it comes time to add the masalas give it a twist and add some tomato+chili salsa.


This is make it look more red too. Finally top off with some freshly chopped cilantro.

Paneer Jalapenos

Main Ingredients: Paneer, Jalapenos and Onions

Start with cutting the jalapenos and onions fajita style and cooking with some oil in a pan. Cook until onion is golden brown.




Prepare the paneer by breaking it into small pieces by hand. Toss into the pan and add salt, chili and haldi and garam masala


Cover and cook for a few minutes, the panner will become soft and mushed.Then add some chopped cilantro and it will soon be ready!
