Cheela

Cheela is like an Indian crepe. Prepare the mix first. Add some besan (garbanzo flour), salt, chili, heeng and ajvien. Add water and stir. Don't let it get too watery.

You can add some chopped onion and cilantro as well if you prefer.

Heat a flat pan. Sprinkle water to cool it down if it gets too hot.

Serve with nimbu pickle!

Pakori

Start with some besan - flour of garbanzo beans. Add some salt, spices, chili powder, ajvien. Add some water and mix into a paste to create the batter.

Chop some potatoes and spinach. Add to the batter and mix well. Usually you would really deep-fry this but you can use a pan and slightly less oil too. Drop in the mix in small chunks and let them cook. Ready to server with your favorite chutneys and sauces!
