Aloo Jira (Fennel)

Ingredients

  • Potatoes (white, red or gold are ok)
  • Red Onions
  • Haldi (tummeric)
  • Chilli powder
  • Salt
  • Cilantro
  • Jira (fennel seeds)
  • Olive oil
Preparation

Wash potatoes and place in a glass container.Boil the potatoes in the microwave. Small potatoes take less time to cook, or you can peel and cut them before microwaving. 



Cut the potatoes in small pieces (before or after cooking) your choice.


Brown potatoes in olive oil.


On a separate pan sautee red onions.


Combine potatoes and onion until fully browned.


Add jira seeds, haldi, salt and chilli powder.


Garnish with cilantro.


Enjoy with roti or as a side dish!

Chutney

Chutney - The Indian Salsa Verde!

Ingredients:

  • Cilantro
  • Thai chilis (found in any store)
  • Lime
  • Mango powder (found at any Indian store)
  • Salt
Preparation:

Buy cilantro with strong cilantro smell and wash it.




Put cilantro, Thai chili, lime, mango powder and salt in blender.
Blend thoroughly until puree.
Add more lime, salt, mango powder to taste.
Chutney should not be too liquidy nor too mushy.





 

Enjoy with samosas and to garnish and add flavor to Indian and Mexican side dishes!

Chole - Garbanzo

In this simplified version, start with some ready to eat S&W Garbanzos.



Chop and blend some onions and pour into a pan with some olive oil and cook.You will smell the strong onion!





Blend some tomatoes and add to the onions when they begin to dry up.





Add some masalas - haldi, garam masala and salt to taste. You gravy is almost ready. Cook for few minutes then add the garbanzo. Cook for another 5-10mins on low heat, then add some cilantro and ready to serve!








Served with Roti, Arbi and basmati rice!

El Pato Paneer

Start with some chopped tomatoes and chili. Add some olive oil to a pan and prepare the gravy. Add El Pato sauce for the special flavor! Add haldi and salt to taste.









Add some paneer - break into small pieces. It will eventually get mixed.









Serve with roti!

Caldo de Tofu - Tofu Soup

The base is low sodium organic chicken broth (Trader Joe's). Add some chopped onion, cilantro, mixed veggies (carrots, peas, corn - frozen). Add some chunks of firm tofu. Cook for about 10mins until boiling and ready to serve.
