Almond Butter Vegan Cookies

Ingredients


  • Bottled almond butter (or you can make your own by blending almonds, sugar and olive oil)
  • chocolate chips
  • sugar
  • 2 eggs 
  • for vegan option use 1 tbs of flax seed to 3 tbs of water=1 egg; refrigerate for 15 minutes
Preparation
Mix  manually almond butter, sugar egg and chocolate chips. Amounts are based on taste. Taste the almond butter and sugar together before adding egg to determine sweetness. 








Add 2 eggs or egg substitute (flax seed).



Mix eggs well.


Preheat oven to 350 degrees.



Garnish with chocolate chips before baking. Shape and bake for 15-20 minutes.

Quiche - Veggie

Ingredients
  • Egg whites
  • Milk
  • Cheese
  • Broccoli
  • Chilli
  • Mushroom
  • Onion
  • Flour
  • Salt and pepper
Preparation




Chop vegetables: onion, chile, mushrooms and broccoli.



Mix two cups of milk with 4 eggs and 1 cup of flour.. 






Chop veggies.


Saute veggies in a skillet with a bit of olive oil.


Spread cheese in the bottom of a glass container.







Add sauteed veggies on top of the cheese.




Add milk, egg and flour mixture. Add salt and pepper to taste.



Preheat oven to 400 degrees.


Bake until eggs are set.

Plum Coulis

Using our home grown plums to make coulis (puree).

Ingredients
  • Plums
  • Sugar
  • Lime
  • Cinnamon
Fresh home grown plums (or from the market).



Wash plums.


Steam plums.




Remove seeds.






Add sugar (to taste, start with half cup sugar for 1 cup of pulp), lime and cinnamon.


Boil at low heat for several hours. Later let it cool and bottle it.



Enjoy with toast or baked brie and crackers!
