Burritos

For these little donkeys warm a tortilla. Add some tinga pollo and you need previously posted recipies - salsa roja, salsa verde, pico de gallo, guacamole and refried beans.

 
Pile on the ingredients and roll into a wrap.




Wrap in foil for easy holding!

Roasted salsa - roja

Start with some tomatillo, tomotoes and a serano chili and cover and cook in a pot. Allow to roast.







Blend with cilantro and some salt. Ready to serve!












Huevos rancheros - Eggs, tortillas, refried beans and salsa (details in another post!).

Falafels

Trader Joe's has good frozen ones and all the other ingredients too - tortilla, tahini sauce, humus, jalapenos and cucumbers.





Heat the falafels in your toaster oven. Add the crisp falafels and everything else into a wrap and ready to eat!

Tinga Pollo Tacos

This one is a bit extended. You need make the roasted salsa, then the chipotle sauce and the pollo.

Salsa Verde - in a covered pot heat the tomatillo and chilli. Cook until well done, then blend and add salt to taste.





Chipotle sauce -mix some chipotle peppers, onion, and tomatoes and blend them.






Tinga pollo - thaw out the chicken and cook until soft. Then shred it.

 




Chop and fry some onion. Add the shredded chicken and chipotle sauce and cook.








Heat some tortilla and prepare some delicious tacos with salsa and salsa verde!

Chilaquiles verdes

For green chilaquiles you need the salsa verde and fried triangle tortilla pieces.

First the salsa verde.
Blend tomatillos, onions, serrano peppers and cilantro. Then sautee with some olive oil








Now the fried tortillas.
Cut tortillas into triangles and fry in oil until crispy. Soak the oil in a napkin!




Add these fried chips to the salsa! Top off with some queso panela or fresco.

Heating Tortillas

Just like you have roti, you can also heat tortillas in a pan. The fancy technique is to stack a bunch of them and flip a couple at a time so that they steam together. This softens them. Serve with any other dish on this blog!!
