Peel, chop and steam potatoes in the microwave and then mash them. Chop onions, tomatoes, chili and cilantro. Add some onion to the mashed potatoes.
Prepare some quick salsa verde by adding cilantro and chili to a can of Embasa salsa.
Next grate some queso fresco. You also need some sour cream.
Putting it all together involves first toasting the tortilla with potatoes in them (ideally deep fried!).
Then add in all the ingredients.

Scrambled Eggs
Starts with some eggs (huevos) - minus the yolk. We prefer egg whites only but your choice. Add a pinch of salt.
Fry some finely chopped onion and chili on olive oil. Beat egg with a spoon and throw in the pan. Cook until brown. Serve with salsa!

Roasted salsa - roja
Start with some tomatillo, tomotoes and a serano chili and cover and cook in a pot. Allow to roast.
Blend with cilantro and some salt. Ready to serve!

Arbi - Taro roots
Wash and cover with cling wrap and cook in microwave for 7-9mins. The roots are full cooked at this time. All you need is now fry in some oiland spices.
Peel the skin and chop into pieces.
Add some oil and fry some cumin first. Give it a more than a few seconds to allow the essence into the oil.
Add the roots, salt, chili and haldi.
