Mustard Aloo

Microwave some potatoes and cut into small-medium pieces. Throw some olive oil in a pan and fry some onions. When golden brown set it aside and add some mustard seeds to some more oil.
Let the seeds cooks and you will notice them expand and burst.




Add in the potatoes, haldi and salt to taste.

Aloo tikki

Boil potatoes - usually 15mins - until they are soft and fully cooked. Let them cool down then peel and grate them. Mix in some salt and shape into a patty. Fry on a pan and ready to serve with some chutney and hot sauce!

Hashbrowns - breakfast

Coming to an end for a nice breakfast. Prepare some hashbrowns (frozen) - more on fresh ones later!
Throw on a pan with some oil and add salt to taste.







Serve orange juice, omlette, hashbrowns and fruta!

Fingerling potatoes

Ingredients:
  • Fingerling potatoes: These are a fancier kind of potatoes. The color and shape add to the flavor too!
  • Salt
  • Chilli
  • Garam masala
  • Olive oil
  • Lime
Preparation (see pictures below):

Spices are always added based on the amount of base ingredient (in this case potatoes)


Wash thoroughly

Leave the skin on the potatoes


Put in the microwave for 5-7 mins (until soft, microwaves work at slightly different temperatures-avoid overcooking!)

Chop in long slices


Add olive oil to a hot pan; wait for sizzling sound

Add pre-cooked potatoes to pan

Stir potatoes until brown



Add spices to taste (salt, chilly and garam masala; evenly distribute spices so they cover the whole potatoes

Continue to stir until evenly brown

Sprinkle just a little bit of lemon juice; ready to serve

Baked Aloo

Clean and chop potatoes. Cover with cling wrap and cook in microwave until soft.





You can use a toast-r-oven or your main big oven depending on your serving size. Lay out on the tray and add the spices and some oil - salt, garlic, parsley, basil and oregano.



Bake until they are brown and ready to serve!

Tapatio aloo - HOT!

For some spicy breakfast potatoes - country style - start with potatoes cooked in the microwave. Break them into pieces. You ofcourse need some Tapatio sauce!


Break the potatoes - don't use a knife.


Add to a pan with some olive oil. Add salt, basil, parsley and some oregano.


Cook until nice and brown - this is a slow process so be patient. When ready add the tapatio, stir and serve!
Caution - can be very spicy.

Cooking in the wild - aloo and elote

This is one part of many to come -  future: carne asada, mexican hotdogs
Start with chopped wood and start a fire!


Potatoes (aloo) - prepare the potatoes by cutting in half and spreading butter (mantequilla) and some garlic salt. Wrap individually in foil. Grill some onions (cebollas) as well (covered in foil).


Set the potatoes, onions and corn on the grill.


Turn the potatoes to make sure they cook through - takes atleast 30mins so be patient!


Enjoy with lime, salt, chilli and salsa!

Aloo Mutter

That is potatoes (aloo) and peas (mutter) as a dish that is without gravy. Start with steamed potatoes in the microwave for 10mins.




Heat some olive oil (or another type you prefer) and put some cumin seeds in the oil. Once roasted, throw in the potatoes and add the spices - salt, haldi, chilli and some garam masala.



Steam some frozen peas in the microwave for 2mins and add them to the mix!


Ready with the some aloo+mutter!
