Tinga Pollo Tacos

This one is a bit extended. You need make the roasted salsa, then the chipotle sauce and the pollo.

Salsa Verde - in a covered pot heat the tomatillo and chilli. Cook until well done, then blend and add salt to taste.





Chipotle sauce -mix some chipotle peppers, onion, and tomatoes and blend them.






Tinga pollo - thaw out the chicken and cook until soft. Then shred it.

 




Chop and fry some onion. Add the shredded chicken and chipotle sauce and cook.








Heat some tortilla and prepare some delicious tacos with salsa and salsa verde!

Mexican hotdogs - in the wild

Hotdog salsa - chopped tomatoes, onions, pickled jalapenos. This will get added to the cooked dogs.


Cook the hotdogs and heat the buns - cover with butter first.

Carne asada - in the wild!

Cooking some bistek! 



Carne asada - get the seasoned arrachera meat from your local carniceria (usually seasoned with chili, garlic, cilantro, onions and lime)


Put on the grill and cook to taste. We prefer well-done.



Tacos - heat some tortillas, add meat, salsa, beans, lime and grilled onions.




Ofcourse some beer!

Cooking in the wild - aloo and elote

This is one part of many to come -  future: carne asada, mexican hotdogs
Start with chopped wood and start a fire!


Potatoes (aloo) - prepare the potatoes by cutting in half and spreading butter (mantequilla) and some garlic salt. Wrap individually in foil. Grill some onions (cebollas) as well (covered in foil).


Set the potatoes, onions and corn on the grill.


Turn the potatoes to make sure they cook through - takes atleast 30mins so be patient!


Enjoy with lime, salt, chilli and salsa!

Salsa - pico de gallo

The fresh salsa - pico de gallo starts with some finely chopped onions (cebollas) and tomatoes (jitomates).


Add some finely chopped chili, cilantro, salt (sal) and lemon (limon)....





Then load onto a tortilla chip!
